Six teams is the sweet spot for a round robin. Fifteen matches split neatly into five rounds of three, nobody ever sits out because six is even, and every team finishes having played five matches rather than the one a knockout might give them.
On three courts this runs in five slots. On one court it is fifteen matches back to back, which is a long session, so at that point either shorten the matches or split into two groups of three and cross over.

Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of courts you have decides the day more than the number of entrants does.
