Five teams play ten matches, everybody meets everybody once, and because the field is odd one team sits out every round. That gives five rounds of two matches rather than four rounds of two and a half, which is the arithmetic reason an odd round robin needs one more round than you might expect.
It is the format to reach for when five teams would otherwise face a bracket with three byes. Everybody plays four matches, the table settles it, and nothing depends on who happened to be seeded into the empty half of a draw.

With an odd number of entrants there is no way to pair everybody at once, so each round one sits out. That is why 5 entrants need 5 rounds rather than 4, and everybody still plays everybody exactly once.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of courts you have decides the day more than the number of entrants does.
