Eight teams is where a round robin starts to be a commitment. Twenty eight matches across seven rounds gives every team seven games, which is a full league season rather than an afternoon.
If that is more than you have time for, the usual move is two groups of four playing a round robin each, then a knockout between the top finishers. That drops the group stage to twelve matches and still gives every team three games before anything is on the line.

Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of courts you have decides the day more than the number of entrants does.
