A CS2 map at MR12 is first to thirteen rounds, which usually lands near fifty minutes and passes an hour if it goes to overtime. That single number is what the whole schedule hangs on, and it is why community cups almost always run best of one until the closing rounds.
The other thing that shapes a Counter-Strike event is the server rather than the bracket. Every match needs its own server with the right config loaded, so the practical limit on how many matches run at once is how many servers you have booked, not how many teams entered.
Double elimination, best of one until the semi-finals and best of three after. Single elimination at best of three only when you have one evening and few teams. Larger events use a Swiss stage into a playoff bracket, and this tool draws the bracket but not the Swiss.

Servers are the real constraint. Rounds run in parallel only as far as you have configured servers to run them on.

Seeds are paired so the strongest and weakest meet first, which keeps the top seeds in opposite halves of the draw. This is the order the board is drawn in, top to bottom.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of servers you have decides the day more than the number of entrants does.
