Pool play into a bracket is the standard shape of a volleyball tournament, indoor or on grass, for the same reason youth soccer uses it: teams have travelled and want more than one match. Eight teams split into two pools of four is six matches a pool, everybody plays three, and the pool finish decides which half of the knockout you land in.
The wrinkle volleyball adds is that a match has no fixed length. Two sets to 25 with a decider to 15 can be over in forty minutes or run past seventy, so a schedule built on fixed slots has drifted by lunchtime. Timed pool play, where each match gets a slot and the score stands wherever it is when the horn goes, is how most one day events stay on time.
Round robin pool play first, then a separate knockout between the qualifiers. Straight double elimination works for six or eight teams with plenty of court time, and single elimination only when the gym is booked for an afternoon rather than a day.
Pool matches are usually two sets to 25 with no decider, or a single set to 25, so a pool round fits one fixed slot. Bracket matches go to the full best of three.
This table ranks on match points, not on set ratio. Volleyball normally breaks pool ties on sets and then on points, so keep those on the printed sheet and apply your own tiebreak.
Every match in a round can run at once, so courts rather than teams set the length of the day: four courts clear a pool round in one slot, two courts take two.

Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of courts you have decides the day more than the number of entrants does.
