Cornhole tournaments run on double elimination almost by default. Games are short, the boards are cheap to add, and a bags night where you lose one game and go home is a bad bags night. Sixteen teams in double elimination is thirty matches, which on four sets of boards is a comfortable evening.
The other decision is how teams are formed. Bring your own partner is the straightforward version and seeds naturally. Blind draw pairs a strong player with a weak one at random, which levels the field and is why so many bar tournaments run it; either way the bracket below is the same, you just fill in the pairs differently.

Double elimination is the standard and the right default. Switch to single elimination only when you have one set of boards and a hard finish time, and to round robin when the field is six teams or fewer.
ACL play is to 21 points with cancellation scoring. Allow around 20 minutes a match, less for a shorter game to 15.
Enter each team as one line in the Teams division, with both throwers after a colon, so the printed bracket names them.
Four sets of boards turns a 16 team double elimination from a very long night into about two and a half hours of play.
Print the bracket before you start. A wall-mounted sheet everybody can see saves the organiser being asked who is up next all evening.

Seeds are paired so the strongest and weakest meet first, which keeps the top seeds in opposite halves of the draw. This is the order the board is drawn in, top to bottom.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of boards you have decides the day more than the number of entrants does.
