Most club pickleball is doubles, and most club pickleball events are round robins rather than knockouts. The reason is simple: people drive to the courts to play, and a single elimination sends half of them home after twenty five minutes. A round robin of six or eight pairs gives everybody five or seven games and produces a table nobody argues with.
Larger tournaments split the field into skill brackets first, by DUPR rating or by a self-rated 3.0 / 3.5 / 4.0 band, and run each bracket separately. That is worth doing before you draw anything: a 3.0 pair in a bracket with 4.5 pairs has a bad morning, and the bracket cannot fix it.

Round robin for club play and anything up to eight pairs. Double elimination once the field is bigger than eight and the result matters, so one bad game does not end a whole morning. Single elimination only when you are short of court time.
Games are usually to 11, win by 2, with tournament matches as best of three. Budget around 25 minutes per match, or 15 for a single game to 11.
Enter pairs as one line each in the Teams division, with both names after a colon, so the printed sheet shows who is playing.
Rounds run one after another, but every match in a round can run at once, so the number of courts sets the length of the day more than the number of pairs does.
This tool records who won, not the score. If your event needs point differential as a tiebreak, keep the scores on the printed sheet alongside the bracket.

Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of courts you have decides the day more than the number of entrants does.
