Double elimination is the ruleset standard for Smash, and it is not really negotiable at a competitive event. Sets are short, upsets are frequent, and sending somebody home on one bad set against a bad matchup is exactly what the losers bracket exists to prevent.
Sixteen entrants in double elimination is thirty sets. The number that decides your day is not the entrant count but the number of setups: on four setups a 16 player bracket is a comfortable afternoon, on two it runs into the evening.

Double elimination, always, for anything competitive. Use pools into a top 8 or top 16 bracket once you are past thirty two entrants, which is what most locals do.
Sets are usually best of three, moving to best of five for winners final, losers final and grand final. Fifteen minutes a set is a reasonable planning number.
Seed from a previous local ranking or from PR placement, strongest first, so the top seeds are spread across the bracket rather than meeting in round one.
The grand final here is a single set. If you run bracket reset, play the second set yourselves and record the overall winner.
Share the bracket link in your Discord before the event starts, so entrants can see their side of the draw without asking.

Seeds are paired so the strongest and weakest meet first, which keeps the top seeds in opposite halves of the draw. This is the order the board is drawn in, top to bottom.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of setups you have decides the day more than the number of entrants does.
